Introduction
Chocolate Log or Chocolate Salami? The truth is that, despite being typically Portuguese, the term “salami” is Italian, and this is a dessert registered in the “elenco dei prodotti agroalimentari tradizionali” as a traditional Sicilian delicacy, under the name “salame turco.” One thing is certain: whether it’s Italian or Portuguese, I don’t know. What I do know is that this specific recipe I’m sharing with you is my mother’s. Full stop!

Melt the butter. Melt the butter for a few seconds in the microwave.

Mix. In a bowl, mix the eggs, cocoa powder, sugar, and melted butter.

Break the biscuits. Place the biscuits inside a bag or wrapped in a cloth and break them roughly with a rolling pin. It’s important that some pieces remain larger, to have various textures. If you want a firm salami, use the full 300g of biscuits. If you prefer a more indulgent salami with a more interesting texture, use about 250g.

Combine. Add the biscuits to the remaining ingredients and mix well.

Roll. Pour the mixture onto a sheet of parchment paper. Roll it up tightly, in the shape of a log, forming a sausage shape.

Refrigerate. Place in the refrigerator for 8 hours.
Serving
Unwrap the chocolate salami. Cut into slices. Place the slices on a rectangular plate, slightly overlapping. Flank them with rosemary sprigs. Dot the sprigs with raspberries.
