Introduction
Vegetable broth is nothing more than an aromatic water. Whenever a recipe calls for adding water during cooking (for example, to rice), it is preferable to use broth, to give more flavour to the dishes. And vegetable broth is the one I use the most in the kitchen. It is so simple and aromatic! There is absolutely no need to buy ultra-processed stock cubes. And the best part is that it can simmer away while you prepare the rest of the recipe! If there is any left over, you can store it in freezer bags, or containers, and freeze it.

Prepare the vegetables. Roughly chop the onion with its skin on, crush the garlic with its skin on, coarsely cut the carrot with its skin on, cut the celery into pieces, and tear the leek leaves. Put everything in a tall pot and cover with water — just enough. Toss the parsley into the pot as well. Let it simmer over medium-low heat for 20-30 minutes, or while you prepare the remaining ingredients of your recipe. If a foam forms on the surface, you can remove it with a spoon and discard it.

Strain the broth. Strain the broth, discarding the vegetables.
